Banana Bread recipe
After several tests, it is finally this recipe that we chose… Light with a hint of greediness.
And for more indulgence, Annaïg always adds a handful of chocolate chips.
It keeps very well, and can be eaten as well for breakfast as for a snack.

Ingredients
4 very ripe bananas
115g softened butter
· 2 eggs
150g caster sugar
· 1 tbsp. baking soda
1 pinch of salt (for my part I use salted butter and I do not put salt)
120g of rice flour
60g of buckwheat flour
30g walnuts
Recipe
1. Preheat the oven to 180°C.
2. In a bowl, mash the bananas
3. Add the softened butter and mix
4. Add the lightly beaten eggs, sugar, baking soda and salt.
5. Add the flours. Mix well.
6. Finally add the crushed walnut kernels and mix gently.
7. Butter a cake pan,
8. Pour the preparation and bake for 1 hour, monitoring the cooking. A knife blade inserted into the center of the bread should come out dry.
9. Turn out and let cool.
Serve the bread with butter and jam.
